Kale is a wonderfully tasty addition to your cooking arsenal.
Unfortunately it can be quite awkward to get, so I haven’t been able to use it in my cooking for the last couple of months. Fortunately I’ve been able to get a supply in the last week both from local corner shop and from Tesco.
So this evening I had planned to do a pasta with anchovy dish. Of course, as luck would have it, I didn’t have any anchovies, so I had to rejig the recipe a bit.
The end result was incredibly tasty, so I’m sharing the recipe with you 🙂
I’m not 100% sure about the calorie count, so take it as a being a “guess”
Kale Pasta & Sardines
A very tasty combination of kale, pasta and sardines with a bit of "bite"
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Calories 700 kcal
Ingredients
- one tin of sardines preferably in olive oil
- tsp of chilli paste or one chilli pepper chopped
- 100 g of wholewheat penne or similar pasta (to make a low carb version swap these out)
- parmesan cheese
- 100 g fresh kale chopped
- 2 tbsp olive oil
- 2 cloves of garlic chopped
- fresh ground black pepper
- juice of half a lemon
Instructions

Put on the pasta to cook

Rinse and chop the kale.

In a pan fry the sardines, chilli and garlic

Add the kale and continue to cook until the kale has reduced and softened

When the pasta is cooked add some of the pasta water to the pan with the kale

Drain the pasta then add it into your kale and sardines and mix well adding the lemon juice

Serve with some parmesan and black pepper to taste

You can make this recipe "low carb" by swapping out the normal pasta for a low carb alternative

I’m not sure if its nationwide, but my local Superquinn always has kale in stuck. Might be worth trying if you’re stuck.

I normally shop in SuperQuinn, Carlow. Unfortunately the last few times I’ve been in there they haven’t had any kale. Tesco in Youghal had it in stock at the weekend and my cornershop, who sell me most of my fruit and vegetables these days, have been able to get it (must to a blog post about that at some point!)
